Alaskan Halibut with Chermoula

 

1. What is your favorite seasonal ingredient? Why?
I love heirloom tomatoes, the combinations are endless. And during August of each year we
celebrate with our own tomato festival.

2. After a long shift, what is your beverage of choice?
Proud to say I haven’t had alcohol in 5 years, helped me lose over 150 pounds, so Kombucha.

3. What is your favorite annual Lark Creek Restaurant Group festival? Why?
Our July Half-Price Wine Month- great turnout for us, and great time of the year for specials.

4. In your opinion, what is the most underrated ingredient?
Salt, it changes food in so many ways, and is left out a lot.

5. What food/s are you constantly craving?
Mexican, 24 hours a day.

6. If you had to pick your favorite LCRG restaurant besides your own, what would it be? Why?
The Tavern at Lark Creek- great location, great food, love the redwoods.

7. How do you spend your time off the clock?
At the gym, or relaxing at home watching our favorite shows.

8. If you could cook for one person, dead or alive, who would it be?
Colin Kaepernick.

9. What is the thing people find most surprising about you?
That I used to weigh 340 lbs.

10. If you could grab only one tool from your kitchen- what would you grab?
My 10 inch chef knife.
